About Joan

Joan Marsh has almost 35 years in the Food and Beverage industry. She has worked at Charlotte Country Day for 24 years she was the assistant Food Service Director for 6 years and has been the Food Service Director for the past 18 years. She has lived in Charlotte, NC for nearly 25 years with her husband of 22 years. She has a son Cole that is 20 and is a junior at UNC Charlotte. In her free time, she enjoys traveling, and spending time with family and friends.

Craig Penson

About Craig

Chef Craig Penson has over 20 years of professional culinary, fine dining & food industry experience. Craig earned a Culinary Arts degree at New York Restaurant School, New York NY. His culinary experience comes from working within a broad range of food service establishments from restaurants, country clubs, and schools. When he creates, he has a passion for using fresh ingredients to make healthy and flavorful dishes. Craig resides in Charlotte, NC with his wife Wanda and his son Emanuel that is 6.

Travis Dey


Upper School & Lower School Chef/Manager

About Travis

Chef Travis Dey, a native of Washington, DC. He relocated to Charlotte, NC in 2013 with his wife and two daughters.

With over 12 years of experience in the culinary industry, Chef Travis graduated in 2005 from The College of Culinary Arts, Johnson & Wales University in Norfolk, VA.

Travis worked at the legendary Kennedy Center for the Performing Arts in Washington, DC. There his talents have led him to prepare meals for Oprah Winfrey, and the Harpo Production Staff during the 2010 Inauguration. Chef Travis has also worked alongside Chef Hemant Oberoi from the Taj Hotel in India creating Indian dishes for maximum INDIA, a three-week festival at the Kennedy Center for the Performing Arts while also working in their in-house restaurant the Roof Terrance Restaurant. In addition, Chef Travis’ passion and extensive experience in the culinary arena, afforded him the opportunity to deliver great food and service to the World Bank, Faculty Club Georgetown University and the Georgetown Basketball Team.

About Kaysie

Kaysie Camacho has been working for Lexington Food Service for 4 years.  She started as the Administrative Assistant and after 2 years she was promoted to Assistant Food Service Director.  Kaysie has extensive catering and banquet experience.  She moved to Charlotte, NC with her husband from Connecticut in 2015
